🎓 BREW SCHOOL
Better coffee starts with the basics.
You do not need complicated equipment to make an excellent cup at home.
A few things make the biggest difference:
- Start with fresh coffee.
- Use clean, good-tasting water.
- Match your grind size to your brewing method.
- Measure your coffee and water for consistency.
- Adjust to your own taste.
Drip Coffee
A great everyday option for all three Palm Haven Estate coffees.
Use a medium grind and adjust the amount of coffee to your preferred strength.
Pour-Over
Pour-over brewing highlights clarity, sweetness, and the individual character of the coffee.
It works especially well with Flight, where the lighter roast profile allows its caramel, fig, fruit, and roasted-nut character to stand out.
French Press
French press creates a heavier body and richer mouthfeel.
It is an excellent match for Honor and Redline, especially for coffee drinkers who enjoy a deeper, fuller cup.
Espresso
Honor was originally developed as an espresso-style blend and works beautifully for espresso, cappuccinos, and lattes.
Its medium-dark roast creates a rich cup that also stands up well to milk.

What Are Coffee Tasting Notes?
When a coffee lists flavors such as caramel, blackberry, chocolate, or fig, those ingredients have not been added.
Tasting notes describe the natural flavors and aromas that may come through in the cup.
Those characteristics are influenced by:
- Growing region
- Altitude
- Coffee variety
- Processing method
- Roast level
- Brewing method
Everyone tastes coffee a little differently, so tasting notes are a guide, not a rule.

Roast Levels Explained
Light-Medium Roast
Light-medium roasting keeps more of the coffee’s natural sweetness and brightness while still developing body.
Flight
Caramel • Fig • Roasted Nuts
Medium-Dark Roast
Medium-dark roasting creates deeper sweetness and a fuller body while maintaining balance and complexity.
Honor
Dark Maple • Brown Butter • Blackberry
Dark Roast
Dark roasting emphasizes chocolate, caramelized sweetness, richness, and body.
Redline
Dark Chocolate • Crème Brûlée • Warm Spices
How Coffee Is Processed
Processing describes what happens to the coffee cherry after harvest, and it can have a major impact on flavor.
Washed Process
In washed coffee, the fruit surrounding the coffee seed is removed before drying.
Washed coffees are often clean, balanced, and well defined.
Washed coffees are used throughout the Palm Haven Estate collection, including coffees from Colombia, Burundi, and Guatemala.
Honey Process
Despite the name, no honey is added.
Some of the naturally sticky fruit layer remains on the coffee during drying, often creating a cup with both clean structure and added sweetness.
The Mexican coffee used in Honor is honey processed.
Natural Process
In natural processing, the coffee cherry dries with the fruit still surrounding the seed.
This can create greater sweetness, fruit character, and complexity.
The naturally processed Ethiopian coffee in Redline helps add depth beneath its dark roast profile.
